Happiest of Holidays to everyone, everywhere!! For those who celebrate Christmas, you have likely been seeing lots of red and green by now, whether it be in your red garland-clad pine tree, green leaves cradling holly berries, or Rudolph’s glaring red nose on that festively “ugly” sweater that dearest Grandma kitted you. Perhaps even your food has received a heaping dose of celebratory colors with the generous dusting of red and green sprinkles on those holiday sugar cookies…

A Holiday Medley to Fill Your Belly

Food for Thought #4

If there were hundreds of hours in the day, I would grow all of my own vegetables, raise my own chickens, and zealously climb up the coconut tree to pick my own coconuts before milling them into coconut flour.

Unfortunately, time is limited, and to-do lists seem to expand beyond limitations. That’s why convenience foods definitely hold their place in one’s culinary arsenal, especially during the busy holiday season.

So, for all of you pie-lovers…

My Christmas feast consisted of top round roast rolled around asparagus and red peppers. I am not only thankful for the lovely food that graced my holiday table, but I am thankful for each and every one of you who is taking the time to read these words right now.
