Bento #9

With the holidays right around the corner, this party in Bento-ville is inspired by one of my favorite entertaining appetizers: the classic shrimp cocktail. These small but mighty protein powerhouses aren’t the only ones invited, however. Also on the guest list are glucomannan noodles (which I absolutely love for their numerous health benefits) along with a simple and easy homemade cocktail sauce. After inviting a few extra accompaniments, the result is another wholesome, fun, and delicious meal that is well worth celebrating!

So Good it Hurts

Meat-less, Eat More

While I do enjoy a primarily omnivorous diet, I do occasionally partake in Meatless Monday. I admit, I did not start doing so as much for health and environmental reasons as I did for the “cool” factor of it. Nonetheless, I have come to realize that it reminds me to take the opportunity to focus more on plant-based, minimally processed foods.

Not only are these types of foods particularly nutrient rich, but also “calorie poor,” meaning you can eat them in high-volumeand that is always good news for those of us with Bottomless Stomachs who enjoy large portions!! Continue reading
