While I do enjoy a primarily omnivorous diet, I do occasionally partake in Meatless Monday. I admit, I did not start doing so as much for health and environmental reasons as I did for the “cool” factor of it. Nonetheless, I have come to realize that it reminds me to take the opportunity to focus more on plant-based, minimally processed foods.

No matter what part of the word you reside in, and no matter what holidays and traditions you celebrate, I wish everyone the best of seasons possible. My Christmas feast consisted of top round roast rolled around asparagus and red peppers. I am not only thankful for the lovely food that graced my holiday table, but I am thankful for each and every one of you who is taking the time to read these words right now.

Being a food blogger who emphasizes high-volume, better-for-you portions of food, I always want more. Bigger. Better. More awesome than the time before. That is not only how I construct my menu plans, but has also been my life tactic in general.
As there certainly are advantages to always pushing for the greatest great that is possible, sometimes it is good to balance those relentless efforts with the acceptance that things just might be terrific the way they are.
I reached into my pantry for a can of pumpkin to use for this year’s Thanksgiving feast, only to notice that it had passed its “best by” date this last October. My immediate reaction was to discard it and purchase a new one so that everything for my dinner would be the best it could be. After some time passed, though, I came to realize that it was actually rather unnecessary to turn my nose up at an innocent can of pumpkin. True; perhaps it was at its “best” before October, and now it will be ever-so-slightly degraded from its prime condition, but I still have this can of pumpkin, and for that, I am thankful.
I decided to use the pumpkin and enjoy it. It can be very humbling at times to be grateful for what we already have without asking for more.
