What is not to be adored about sandwiches!? You get everything your heart could possibly desire; meat, cheese, vegetables, condiments, or all of the above contained within a hearty housing of…bread???
At first glance, this may look like your average sandwich, sub, hoagie, grinder, or whatever palate-worthy term by which you choose to address this classic beauty. Take a closer look, however: is that a…sweet potato? Yes indeed–I took some experimental liberty to replace the bread with a whole spud, skin and all.
This was most definitely an impulsive decision that worked in my favor. The soft, tender interior of the sweet potato took on a condiment-like quality that wonderfully complimented the fillings. For anyone with special dietary needs or preferences, this is also a delicious gluten-free bread option. Altering the presentation method of one of your usual recipes can always breathe new life into an old favorite. I would highly recommend giving this a try. Cheers!
