Bento #5

“I’m really not a big fan of bento meals,”…SAID NOBODY EVER!!!

Clockwise from top left:

1. Sliced jicama

2. Chocolate pumpkin seeds

3. Seasoned Popcorn 
1 cup air-popped popcorn
Nonstick cooking spray
1 teaspoon nutritional yeast
Sea salt to taste

4. Red Bean Patties with Spicy Sauce
Patties:
1/2 cup cooked small red beans, roughtly mashed
1 tablespoon ground flaxseed
1 tablespoon coconut flour
1/4 cup liquid egg whites
Sea salt and pepper to taste

Sauce:
2 tablespoons creamy dressing
1/2 teaspoon fresh lime juice
Cayenne pepper to taste

Combine all patty ingredients and shape into 4 disks. Cook in a nonstick skillet on medium heat 3-5 minutes on each side until lightly browned. Combine sauce ingredients and serve with the patties.
